The activity of the mill begins at the end of September and lasts until the end of December; the olives from Montepulciano and the surrounding area are processed during this period. In our family mill the milling process is carried out with a continuous cycle system and by cold extraction using Pieralisi machines.
The plant is certified to the processing of : BIO/organic, Tuscany PGI and Terre di Siena PDO. The olives come from selected olive groves and are processed within 5 hours of arrival in the mill for the production of our oils: Tuscany PGI EVO oil – BIO/organic EVO oil – Terre di Siena PDO EVO oil – Italian EVO oil.
